One of the most important dish at the restaurant is the golgappa shots. The crispy round puri with sweet and spicy chutney served with customized filling is the most favorite dish among Indians. If one like the dish but cannot travel to taste, here’s how you can recreate the same at home.
Roast one cup sooji and add it to the bowl. Accompany the sooji with one cup maida. Knead the dough in such a manner that it stays soft and elastic. The dough for plain is ready, so, small bits of the same are to flattened with the help of a rolling pin. Make sure that there is no crack in the puri and make it very thin so that it does not turn soft after cooling. Once the puris are ready, they are deep-fried and let them stay in oil till they turn golden yellow. The golgappa is ready is serve. You can make variety of syrups to go with the puris. Sweet and spicy are the classic ones but you can have your own customized syrup. They go well with the fillings such as potatoes and ragda.
